Enzymes perform their functions within a specific temperature and pH range (which is specific for each enzyme in particular). In turn, within this range, there is a specific value at which they act in the most efficient way possible, which does not mean that they cannot on other values in the range. However, outside the limits of the range, the internal characteristic of enzymes can be affected and cause their denaturation, thus losing their capacity of action.
